I recently returned from Samana Health Retreat’s signature health and yoga retreat in Costa Rica. Along with my wonderful business partner and sister, Julie, we downward dogged, juiced, and zip-lined our way through a rejuvenating week with a lovely group of women. Along the way we all learned some powerful lessons, and here are a few of mine.

Shrimp Ceviche in Coconut Broth
Serves 4 as a main dish
1 lb peeled and deveined medium shrimp
1 cup Fresh lime juice
1 large yellow onion diced
1 red bell pepper diced
1 Jalapeno pepper, seeded and minced
1 bunch cilantro minced
¼ cup coconut milk
Salt and pepper to taste
Organic corn tortilla chips
- Place shrimp in a glass bowl and cover with lime juice to marinate for about 10 minutes, or until they turn pink and opaque. Meanwhile, place the onion, bell pepper and jalapeno in a large, non-reactive (stainless steel, glass or plastic) bowl.
- Remove shrimp from lime juice, reserving juice. Dice shrimp and add to the bowl of vegetables. Pour in the remaining lime juice marinade. Add cilantro, salt and pepper to taste. Toss gently to mix. Let sit for 30 minutes. Add coconut milk just before serving. Serve with organic corn tortilla chips.
Now I am back to the regular routine, with my winter boots and jacket at hand. But I am keeping in mind my new (and old!) lessons, and weaving them into myself. Always keep learning!
