1 bunch of kale
5 medium sized beets
2 Tbsp olive oil
Juice of 1 lemon
Pinch of sea salt
Cut off leaves of beets if they are present, leaving about an inch attached to the beet (don’t throw out the greens – they are great for another salad!). Scrub beets well, do not cut or remove skins. Boil in covered pot for 30-45 minutes, depending on size.
While beets are boiling, wash kale and rip into bit size pieces. In a bowl, add ½ Tbsp of olive oil, and a pinch of sea salt. Massage the oil and salt into the kale with your hands – this will cut the bitterness and give the kale a bright green appearance.
When beets are finished, run under cold water to cool. Now the beet skins should easily peel off with your fingers (if you haven’t cooked them enough you may need a peeler). Cut peeled beets into thin discs, add to kale.
Add olive oil, lemon juice, and another pinch of sea salt. Mix well.
Just before serving, top with your desired amount of pepitas, sunflower seeds, and goat cheese.
